Abstract

Innofresh, a Thai food manufacturing company founded in 2003, evolved from a small business focused on mayonnaise and salad dressings into a one-stop-service original equipment manufacturer (OEM) serving domestic and international customers. This case study explores the entrepreneurial journey of Innofresh founder Dr. Siriporn Pipatsattayanuwong Chua and how her background in food science and sensory science shaped food innovation, product development, problem-solving, and business decision-making. It focuses on how scientific knowledge developed into entrepreneurial capability through experimentation, customer interactions, failures, and accumulated experience, while also highlighting the challenges of managing a growing business and recognizing the need to bring additional expertise into the company.
