Abstract
Illo’s Group evolved from a small home-based ghost kitchen into one of the Philippines’ fastest-growing multi-brand food service companies by combining premium food quality, customer-centric hospitality, and operational innovation. As demand accelerated across catering, restaurant, and delivery channels, the company faced a critical challenge common to many high-growth businesses: how to scale operations without compromising the brand promise of warmth, quality, and reliability.
Drawing from insights provided by COO Maq Agapito, this case study analyzes Illo’s organizational transformation from a founder-centric business into a scalable, systems-driven enterprise through process redesign, operational standardization, and management-by-exception.
The case highlights the tensions between operational efficiency and personalized service, scalability and culture, and growth and profitability. The case study encourages an evaluation of strategic options related to ERP implementation, centralized production, logistics expansion, talent development, and organizational change management as Illo’s seeks to build a scalable operating model without diluting its customer experience and brand equity.
